Sardine Pasta Sauce

Since the book was first published in 2007, doctors with MS such as George Jelinek in Australia and Terry Wahls in the USA, have started to advocate diet as a treatment for MS. Although they each suggest a slightly different diet, both have found nutritional medicine more effective in their own case than the currently available drugs. The updated edition includes both George Jelinek’s Overcoming MS diet, and the Wahls Protocol, as well as current research on the benefits of vitamin D and the effects of substances such as salt and sugar on people with MS. There are also lots of new, easy to cook, recipes.

To whet your appetite, here’s one of my favourite recipes which is suitable for a healthy eating diet, the low-fat diet, the Best Bet diet and the Overcoming MS diet.

Sardine Pasta Sauce  (Serves 1)

1 dstsp olive oil

1 stick celery, sliced, or ½ a small leek, sliced

1 clove garlic, crushed

½ red pepper, deseeded and sliced

½ small courgette, sliced

200ml. (7 fl.oz.) passata

1 tin sardines, drained and chopped

1 tsp paprika

1 tsp dried parsley

Soften celery or leek,  garlic, pepper and courgettes in oil in a covered pan over a low heat for about 10 minutes. Add  passata, sardines and herbs and spices. Mix well and heat through. Season with salt and serve with your pasta of choice.
